"My goal is to have a single Flutter code-base that ships to both iOS and Android and lets the user snap a receipt, fix the picture if it is skewed or dark, run OCR directly on-device, and see each line item neatly broken down into quantity, description and price. The app should support at least five type of restaurant receipts

Accuracy matters: on our agreed test set the extraction needs to reach 90 % or better, even when the photo is slightly blurred or poorly lit. I want the entire pipeline—image handling, text recognition, parsing and storage—to stay under my control. That means no calls to private back-end servers; if any cloud components are needed, you will wire them to service accounts, databases or buckets that I create and manage.
